About Our Bread
I'd like to introduce you to our breads. We make several distinct types, including bagels, anpan, sourdough, Italian ciabatta (and sometimes focaccia too!), French rustique rolls and loaves, and cinnamon rolls (and other varieties of rolls - chocolate-iyokan peel rolls, to name but one). In addition, we make truly fantastic brownies and honey-butter rusks.
The bread boxes we put together for shipping include a selection taken from the ever-expanding list below (and may even contain a new variety, should the week's harvest suggest it).
Bagels| | Whole Wheat Plain Bagel A plain bagel made with our own Hototogisu Farm-grown stone-ground whole wheat flour for extra whole-grain nutty flavor. One of our simplest bagels.
| | Walnut Miso Bagel Walnut miso is made from out own homemade
(and homegrown!) miso, finely chopped walnuts and mirin. While it may
sound like an unusual bagel filling, this is one of the staff favorites.
| | | Sesame Spinach Bagel A bagel whose color has to be seen to be
believed. Made with our own Hototogisu Farm spinach, this bagel is
perfect for toasting and spreading with cream cheese. |
| Dried Apple Bagel Filled with oven-dried apples from Iwate
Prefecture. We dry the apples ourselves, so you can be sure there are no
additives and no extra sugar - just natural apple goodness. | | | Iyokan Citrus Peel and Cream Cheese Bagel Candied iyokan citrus peel and cream cheese are kneaded into this bagel - a perfect combination. | | Milk and Honey Bagel Honey from our own Hototogisu bees and milk from happy cows in Tottori Prefecture go together to make this tasty bagel.

SourdoughOur sourdough is the simplest of our breads, being made from water,
flour and salt leavened with a wild flour and water starter. Our own
Hototogisu Farm stone-ground whole wheat contributes a touch of
whole-grain goodness and time and skillful handling go to make our
sourdough bread one of the tastiest breads around. | | Plain Sourdough Roll and Loaf Wheat-y goodness. That is all there is to say, really. This loaf is the simplest, yet tastiest bread imaginable.
| | Seed Mix Sourdough Roll A mix of seeds including oats and
sunflower seeds make a nice crunchy coating for this sourdough roll.
Perfect sliced lengthwise for a sandwich. | | | Raisin Sourdough Roll Flavorful crust and moist crumb filled
with organic raisins. Slice, toast and spread with butter or enjoy as-is
for a quick snack. |
| Cashew Spelt Sourdough Roll Cashew nuts and spelt flakes give this roll a nutty richness that has made it one of our customers` favorites. | | | Bacon and Herb Sourdough Roll A staff favorite, this is made with homemade bacon (free of nitrites!). So, so yummy! |

Anpan| | Plain Tsubu An Anpan We make tsubu an here at the bakery, with the result that many of our customers tell us they will no longer buy anpan anywhere else!
| | Kuromame Anpan In this version of anpan, sweet simmered black soybeans are added to tsubu an for a special treat. | | | Walnut Tsubu An Anpan Walnuts compliment an nicely, making this bread a perennial favorite.
